Easy Chocolate Chip Pancakes | Vegan

Breakfast is my favourite meal of the day, yet it's the one meal that I have the least recipes of on here! So, it's about time that changed. Expect a bunch of breakfast posts coming your way soon, ranging from different styles of oatmeal recipes, pancakes, smoothies - the lot! Obviously these will still be shared alongside lunch and dinner recipes, healthy snacks and yummy treats.

I still haven't quite mastered the art of the perfect pancake in terms of shape and colour, but I'm definitely getting there and I just couldn't wait to share this delicious recipe with you as the flavours and texture is just perfect. Of course I had to add some chocolate chips to this recipe to jazz it up a little, not to mention I'll use any excuse to eat chocolate, so I thought why not add them into breakfast recipes when you can?! I then had some raspberries on the side for some extra sweetness as I didn't include any maple syrup which you would usually find in most pancake recipes or it's usually smothered on top (not saying that's a bad thing, I love it!) but as there are chocolate chips in the pancakes, I found that maple syrup really wasn't needed.

You could pretty much top these pancakes with anything, or eat them simply as they are! However, I would definitely recommend berries, my favourites being strawberries and raspberries, and even a bit of banana on the side! You could also add coconut yogurt and any kinds of fruit, or if you choose to eat these as a dessert then some whipped cream and sprinkles would be delicious!

The recipe is very straight forward so you'll be a pro at remembering it in no time!

- EASY VEGAN CHOCOLATE CHIP PANCAKES - 

Makes: 6 pancakes   Prep Time: 5 mins   Cook Time: 4 mins

You will need: 

- 1 cup self raising flour
- 1 tsp baking powder
- 3 tsp golden caster sugar
- 200ml dairy free milk (I used unsweetened almond)
- 2 tsp vanilla extract
- large handful vegan chocolate chips (my favourite are Moo Free)
- 1 tsp vegetable oil

Method - 

1. In a large bowl, combine the self raising flour, baking powder and caster sugar. Gradually pour in the dairy free milk, whisking as you go to prevent any lumps! Once there are no lumps, add the vanilla extract and fold in the chocolate chips. The mixture should be fairly thick, but still pourable, so don't worry if you think it's too runny.

2. In a non stick frying pan, add a teaspoon of vegetable oil (repeat this step for every time you pour in the batter) and use a brush of some kind to coat the entire pan. Pour in around 1/4 cup of the pancake mixture into the pan and allow it to cook on low - medium heat for around 2 minutes on one side, before flipping it over. Wait until bubbles form before flipping.

3. Repeat step two until all of the mixture has been used up. This should create around 6 pancakes, depending on how much mixture you use per pancake. Stack them all up or share between 2-3 people as they are filling! Serve with your favourite berries and enjoy!
