Cheesy "Chicken" & Sweetcorn Pasta | Vegan

I feel like during this difficult time we're all looking for a sense of comfort, whether that's through loved ones, getting back into things you once loved, or even food! Comfort food is a big thing for a lot of us and my favourite is always pasta based meals.

I've teamed up with one of my favourite vegan cheese brands - Bute Island Foods, to bring you this delicious cheesy chicken and sweetcorn pasta. This dish is so creamy and is really easy to make, you won't be spending too long preparing it either!

I love the addition of sweetcorn in this recipe as it makes all the difference in flavour and texture, so I definitely wouldn't recommend skipping out on adding it!

- CHEESY "CHICKEN" PASTA - 

Serves: 2   Cook Time: 15 mins

You will need:

- 160g fusilli pasta
- 1 tsp vegan butter
- 1/2 tsp chilli flakes
- 1 tsp garlic
- 100g vegan quorn chicken pieces (or other meat replacement)
- 1/2 cup frozen sweetcorn
- 1/2 cup canned coconut milk
- 1/2 cup Bute Island mozzarella shreds
- 1/4 cup Bute Island mild chedder shreds
- large handful spinach
- 1/2 tsp ground black pepper
- 1 tbsp chives

Method - 

1. Fill a saucepan with water and bring to a boil. Once boiling, add the pasta.

2. In a large frying pan / wok, add the vegan butter and melt it on low heat. Add the garlic and chilli flakes.

3. Add the vegan quorn and frozen sweetcorn to the same pan and allow this cook for around 8 minutes on medium heat, stirring every now and again. Pour in the coconut milk and stir everything together until combined. Add in the mozzarella and mild cheddar shreds, stirring continuously until they have melted into the sauce. I also added in a large handful of spinach at this point, however this is optional.

4. Once the pasta has finished cooking, drain the excess water and pour the pasta into the pan with the sauce. Stir it all together until well combined and sprinkle some black pepper on top.

5. Divide the pasta between two bowls and finally finish it off with some fresh chopped chives and a side of rocket (optional).

See how quick it is to whip up something so simple and delicious?! I've not come across many creamy vegan friendly dishes, so hopefully this will help those of you who have the same issue!
