Sweet Potato & Chickpea Coconut Curry | Vegan

Winter calls for all things comforting and curry is definitely high up on the list for me. When making homemade curries, I always find that the recipes are tomato based, which can sometimes get quite boring if I'm honest, which is why I wanted to make this recipe a little bit different!

I absolutely love coconut, so the creaminess and nuttiness of this curry is so delicious along with the Thai spice, without the overwhelming taste of tomato!

- SWEET POTATO & CHICKPEA VEGAN COCONUT CURRY - 

Serves: 4   Prep Time: 10 mins    Cook Time: 40 mins

You will need:

- 2 medium sweet potatoes, peeled and cut into small chunks
- 2 tbsp red curry paste (I used Blue Dragon red Thai curry paste)
- 1 can of full fat coconut milk
- 1 can of chickpeas, drained and rinsed
- 2 large handfuls of spinach
- 1 medium onion, peeled and sliced thin
- 2 garlic cloves, crushed
- 1/4 tsp ginger
- 1/4 tsp ground black pepper
- 1/2 tbsp lime juice
- pinch of salt
- 1 red bell pepper, cut into thin slices

Method:

1. In a large cooking pot, melt the Coco Road coconut oil. When it begins to sizzle, throw in the thinly sliced onion, stir it around until the onion becomes fragrant. 

2. Add the garlic and ginger to the pot and stir it around with the onion. Scoop the red curry paste into the pot and use a wooden spoon to stir it around and melt it into the ingredients completely. 

3. Add the sweet potato chunks into the pot, along with the full fat coconut milk, chickpeas, salt, lime juice and black pepper. Stir everything until well combined and cover the pot with a lid for 30 minutes, checking on it every now and then, stirring occasionally. 

4. Check the sweet potatoes by poking them with a fork / knife. If they are soft, start adding the spinach and red bell pepper slices. Stir and cover with the lid again for a further 10 - 15 minutes.

5. Once the curry is done, remove from the heat and serve it up with some rice, following the packet instructions accordingly. 

6. Garnish the dish with parsley and a wedge of lime for additional flavour!
