Easy No Bake Granola Bars | Vegan

Sometimes it's easy to get swept up in all things sugary and comforting this time of year, and whilst I'm a big fan of that, I think it's also important to take care of your body and give it what it wants from time to time.

So today I bring you these delicious, chewy no bake granola bars that not only taste like an indulgent treat, but are packed full of healthy ingredients and are brilliant for on the go snacking.

As the title says, these granola bars are easy, so no need to worry about having all the right equipment and technique - even I don't have that. They are really quick to whip up, but you will have to chill out for two hours while they're in the refrigerator, but hey, that just means more time catching up on your favourite tv series, right?

- EASY NO BAKE GRANOLA BARS - 

Prep time: 10 mins   "Cook" Time: 2 hours   Makes: 12 bars

You will need:
- 2 1/2 cups oats
- 1/4 cup almonds, chopped
- 1/4 cup hazelnuts, chopped
- 1/2 cup date syrup (could sub for a different syrup)
- 1/4 cup vegan butter
- 1/2 tsp vanilla extract
- 1/4 cup coconut sugar
- 1/2 cup raisins
- 1/4 cup vegan chocolate, chopped into tiny chunks (I used King Monty Classic Cacao*)
- 1/4 cup vegan chocolate for melting 

Method:

1. In a large mixing bowl, add the oats. Chop the hazelnuts and almonds into small pieces and mix them in with the oats.

2. In a small saucepan on low heat, add the vegan butter, date syrup, vanilla extract and coconut sugar. Continuously stir everything until the butter has completely melted before pouring the mixture into the bowl of oats.

3. Stir the wet mixture into the oats and nuts, making sure everything is well coated.

4. Chop up the vegan chocolate bar into tiny chunks. Add these into the bowl along with the raisins, once again mixing everything together until well incorporated. 

5. Line a square baking tin with parchment paper and pour the mixture in, using a spatular to spread it out evenly. Press down the mixture with the spatular so that the top is flat and everything looks even.

6. Place the granola in the refrigerator for at least two hours.

7. Once the two hours is almost up, start melting the rest of the vegan chocolate (This should have used a whole chocolate bar overall, so half for the granola bars and half for melting). Melt the chocolate in a saucepan on the lowest heat, stirring continuously until completely melted, making sure it doesn't burn on the edges at all. 

8. Once the chocolate has melted, remove the granola from the refrigerator and lightly drizzle the chocolate on top. 

9. Finally allow the chocolate to set on the granola, by placing the baking tin if the freezer for 5 minutes. Once set, cut the granola into 12 bars by cutting straight through the middle and then horizontally 6 times.
