Vegan Chocolate Chunk Cookies

Happy Sunday everyone! I hope your weekend is going well, whether you're on a Sunday adventure or having a lazy day and sipping all the coffee your body can consume, like me. I've been really into baking lately which although isn't the healthiest option, it sure is the tastiest and my family are always in favour of me coming up with something new to share with them.

I was recently gifted a huge selection of chocolate from the lovely team at iChoc, aka, the best vegan chocolate ever. Seriously, there's no vegan chocolate like it and the amount of delicious flavours they have is unbelievable - my favourites being "Choco Cookie" and "White Vanilla". So I thought baking cookies using a couple of their bars would be the best Sunday treat.

If you read last weeks post then you'll know I made the dreamiest brownies along with what I've been watching lately, perfect for any lazy Sunday!

I thought today would be a perfect excuse to make a big batch of chocolate chunk cookies for my family and I to enjoy throughout the day while singing along to beloved Disney playlist and writing this very post for you.

Weekends are my favourite time of the week to sit down and write blog posts as well as spending time with the family and baking sweet treats with all the good music.

I switched up a few things from Liv B's chewy chocolate chip cookies recipe to suit what I had in the cupboards along with a slightly different cooking method and they turned out just fine - my little brother being the biggest fan of them out of everyone which was surprising!

Ingredients:
- 1/2 cup vegan butter
- 1 cup brown sugar (would probably use a bit more next time)
- 1/4 cup dairy free milk, I used Alpro coconut almond
- 1tsp baking powder
- 1tsp baking soda
- 2 cups all purpose flour
- 1/2 cup iChoc Super Nut chocolate
- 1/4 cup iChoc Classic chocolate

Method:

- Preheat oven to 170 C.
- Cream vegan butter and brown sugar together in a mixing bowl until smooth.
- Sieve flour into the mixture along with the baking powder and baking soda. Stir until combined and add dairy free milk. Stir again until a smooth mixture has formed.
- Cut up iChoc Super Nut bar and Classic bar into tiny chunks and mix into dough.
- Scoop enough mixture to make nine balls on a tray lined with parchment paper.
- Cook for 20 minutes / until golden brown. Let them cool for around 10 minutes before eating!

*This recipe made enough for nine cookies, although they did turn out large, so if you want them smaller then I recommend spacing the dough onto two separate trays and halve the size of balls.
* I added more flour than the original recipe as the mixture was more like cake mix rather than cookie dough and couldn't be formed into cookie dough balls.

There are so many different recipes that you can enjoy with iChoc bars or eating them alone are the best movie snack. I love all of their flavours, so I couldn't recommend all of them enough. Their white chocolate bar is the best vegan white chocolate I have ever tried, so if you're on the hunt for one then this is a must! Their bars are a hit with my entire family even though none of them are vegan, so you really can't notice much of a difference.
